Inspired by a traditional recipe from an old mushroom cookbook (1947) I found among our family cookbooks, these patties are vegetarian and gluten-free. Made with mushrooms, oats, parmesan, and thyme, they are packed with strong flavor and texture even meat lovers can't resist. The recipe calls for foraged yellowfoot chanterelles, but you can substitute with any mushrooms from the store that have a tougher texture like portobellos or cremini.
Wild Mushroom Barley Bake (Houbový Kuba) is a traditional South Bohemian dish that is served for lunch on Christmas Eve. It primarily consists of barley and wild mushrooms and has plenty of garlic, marjoram and caraway. Packed with healthy nutrients, this makes a hearty vegetarian dish for any occasion.
Get the recipe for one my favorite mushrooms dishes: Yellowfoot Chanterelle Goulash. Inspired by my grandma, this dish is made with foraged yellowfoot chanterelles (Craterellus tubaeformis) that grow abundantly in winter months, making it the perfect comfort food for a quick dinner!
